I'll include some of my favorite healthy recipes that I use.  I encourage anyone out there who actually enjoys cooking to send me some so I have more than just a couple!




Mango Salsa Chicken

I'm sure this works with any salsa, but I use the Peach/Mango Salsa from Costco.

6 Chicken Breasts
1/2 container Salsa

Put in the crock pot on low for 6 hrs. or high for 3-4 hours.  Then shred up the chicken and put it in whole wheat tortillas.  I like a little bit of light sour cream in mine and my family puts cheese in theirs--but I try to stay away from the cheese.


Fruit Smoothie


1 c. skim  milk (80 calories)
1/2 c. yogurt (dannon is the lowest in calorie that I've found--I get the big container and it's only 55 calories for 1/2 cup)
1 c. frozen fruit (your choice but usually only about 50 calories or so)


Super tasty and it makes a TON--so it's very filling and just under 200 calories!




Taco Soup


4 chicken breasts
1 qt. chicken broth (low sodium if you have it)
1 pkg. taco seasoning
1 can diced tomatoes
1 15 oz. can tomato sauce
2 cans black beans
1 can kidney beans
1 can navy beans/northern beans
1 cup frozen corn
1 T. cilantro


Cook the chicken in the chicken broth on low/medium heat, while covered  until cooked through.  Then cut up the chicken into bite size pieces.  Add all other ingredients (rinse and drain beans prior to adding) and bring to a boil.  Reduce heat to simmer for about 20 minutes.  Then add cilantro.  This is an awesome recipe and my kids eat it!  It's only about 340 calories in about a 1 1/2 cup serving.  If you use regular chicken broth, it does have a lot of sodium--so be careful!
